Ok, let’s be honest… it’s more likely that you’ve spent all day struggling through lessons and by the time 5 o’clock rolls around, your mental energy is totally spent. The Dinner Challenge
I’ll start with the disclaimer that I love to cook. I really do. Before kids, I subscribed to a foodie magazine and would make every recipe, cover to cover. But now… ain’t nobody got time for that!
I still pore over cookbooks and magazines for occasional inspiration, but for the day-to-day, I’m dealing with picky kids, a pickier husband (though he’ll never admit it), a need for a reasonable budget, and NO TIME.
I also despise grocery shopping.
So what’s a homeschool mom to do?
I’ve tried it all.
I have a long list of meal planning ideas, Pinterest boards full of tempting recipes, and the credit card charges to show I’ve done this meal planning service thing before. I have a cabinet full of cookbooks, including some that suggest seasonal meals and menus. They all work for a while, but few of them have stuck.
Have I mentioned I despise grocery shopping? Lately, I was stuck in an endless cycle of checking and re-checking ads, pulling out a bunch of recipes, realizing the main ingredients for the recipes were at full price, then going back to the drawing board. Over. And over. UGH. It was sucking all the joy out of cooking for me.
I was attracted to “The Dinner Daily” because their ads said that their meal plans are based on sales at your favorite local grocery store.

Why I Love The Dinner Daily
My personalized menus have been working so well for me, I feel like I could write a love poem to their website! But I’ll spare you the awkwardness. How about just a bulleted list?
- Choose your favorite store, and your recipes maximize savings: select from local chains, or even Wal-Mart and ALDI!
- Choose your menu preference: pick from low carb, allergen-free, or basic menus, and tell them how many times you like your main dishes to include different food groups!

The wonderful folks at The Dinner Daily have given me permission to share a recipe with you! I chose this dish because it was something so different than my family was used to, and we loved it. AND it was easy enough for my teenage son to prepare for us. I couldn't wait for the leftovers!
Pork Tango
Ingredients
- 1 1/2 lbs pork tenderloin
- 2 tsp garam masala
- 2 tbsp olive oil
- 3 red/orange/yellow bell peppers cut into large wedges
- 1 mango peeled and pitted
- 1/2 cup fresh cilantro stems removed
- 2 tbsp apple cider vinegar
- 1 tbsp honey
- 1/2 small onion chopped
Instructions
- Preheat oven to 450. Place pork in baking dish & sprinkle generously with salt, black pepper, & garam masala. Place pork in oven and cook for 10 mins. Turn pork over and place red peppers on top. Lower oven temp to 400, and continue to cook for another 10 mins, until pork reaches internal temp of 140 degrees. Remove pork from oven and let sit 10 mins before slicing. While meat is cooking, make Tango Sauce: place all remaining ingredients in a blender and blend (for a smooth consistency) or finely chop remaining ingredients (for more of a salsa style sauce). Either way, the flavor is delicious! Serve sliced pork with sauce.
